Looking for a great recipe for Meatless Monday or simply a really good pizza? Look no further! I just made this terrific veggie-loaded naan pizza and my family loved it. Even the kiddos! It is very simple and you can easily add other vegetables; so make it your own and enjoy.
3-4 tablespoons olive oil
1 red bell pepper, cut into strips
1 red onion, sliced thinly
1 head cauliflower, cut into florets and then sliced thinly
1-1/2 teaspoons red pepper flakes (or more to kick it up a notch!)
3-4 pieces whole wheat naan bread
2 cups pizza sauce
2 cups mozzarella cheese (or more if you’re really cheesy!)
Fresh parsley, chopped with stems removed
Preheat oven to 400 degrees.
In a medium skillet, add two tablespoons of olive oil over medium heat. Add onion, kosher salt and pepper. Sauté onions until translucent, about 5 to 7 minutes. Remove onions, set aside in a medium bowl.
In the same skillet, add one tablespoon of olive oil over medium heat. Add red bell pepper, kosher salt and pepper. Sauté peppers for about 5 minutes or until softened. Set aside in a medium bowl.
In a large bowl, toss together cauliflower florets, red pepper flakes, and a couple of teaspoons of olive oil. Set aside.
Spray a pizza pan or baking sheet with non-stick cooking spray. Cover each piece of naan with ½ cup pizza sauce. Then top each piece with sautéed red onion, red peppers, and cauliflower. Add as much cheese as desired. Place in oven, bake approximately 15 to 20 minutes or until naan edges are golden brown. Sprinkle with chopped fresh parsley and enjoy!
