This is a super-quick recipe for those days when you want some flavor and spice but don’t have the time to cook. Don’t limit yourself with this recipe; add some of your favorite taco toppings for a healthy, protein-packed south-of-the-border meal. Olé!
Servings: 6 (1 taco per serving)
6 whole wheat flour tortillas
1 12-ounce can albacore tuna packed in water, drained
2 cups shredded romaine lettuce
2 medium tomatoes, chopped
1/4 cup shredded carrots
1 small onion, chopped
4 ounces grated, reduced-fat Monterey Jack or cheddar cheese
Picante sauce, as desired
Fat-free sour cream (optional)
- Place two heaping tablespoons of tuna across the middle of each tortilla.
- Add lettuce, tomatoes, carrots, onion and cheese to each taco.
- Fold in half or wrap, and serve with picante sauce and sour cream (optional).
